A kernel of wheat consists of three parts – the bran, germ and endosperm. The bran is made up of many layers of vitamins, minerals and rich proteins. It forms the tough outer covering, with a rough surface that acts like a sponge to absorb and remove unwanted poisons and toxins from the digestive system.
The germ is the life-giving part of the seed, packed with vitamins B and E. However, once milled it can only last 72 hours at room temperature before going rancid, so it needs to be used right away. The endosperm, also known as the white centre, is mostly starch with very few vitamins.

Most of today’s store-bought milled flour is made from the endosperm, meaning they contain very little nutrients compared to freshly milled wheat. The germ and bran are full of organic phosphates, which provide food for the brain and nerve system, as well as calcium for bones and teeth. Consumption of the complete kernel is necessary to receive the full value from wheat, especially the trace elements so essential to human nutrition.
